Greek Spaghetti Squash with Grilled Chicken and Cherry Tomatoes

Are any of you fans of the HGTV show, Fixer Upper with Chip and Joanna Gaines? If you haven’t seen that show, go watch it ASAP. I absolutely love the beautiful simplistic style of the homes that they are able to create. There is something about a whole bunch of Shiplap that feels so fresh and clean to me! I was totally channeling my inner Joanna Gaines as I whipped up this recipe. I just really wanted to showcase how beautiful whole and healthy foods can be.

DSC_4958-2When I cook at home, dinners look a lot like this- a lean protein with a variety of veggies and a grain or starch. Today, I kept things simple with spaghetti squash, cherry tomatoes, and grilled chicken. I was so excited that I finally found some really tasty tomatoes at the store. They are no where near as flavorful as locally grown tomatoes in the late summer, but I will take what I can get.DSC_4950-2This Greek chicken is one of my favorite go-to recipes. The marinade is only 4 ingredients and takes no time at all to whip up. I’ve grilled, baked, and even slow-cooked this chicken and it comes out perfect each time. One of our very favorite meals is homemade pita bread sandwiches with spinach and feta hummus and this chicken that has been slow-cooked and shredded. Total YUM! Marinaded Chicken

Instructions
  1. Combine chicken with ingredients for Greek marinade in a large ziploc bag. Let marinade in the refrigerator for at least 1 hour before cooking.
  2. Use a small knife to pierce spaghetti squash along the midline for ventilation. Microwave for 5 minutes. Cut spaghetti squash in half and remove seeds. Place spaghetti squash halves facedown in a microwave safe dish with a 1/4 inch of water in the bottom. Microwave for an additional 5 minutes. Remove from dish and let cool while the chicken cooks.
  3. Heat a grill pan over medium-high heat and add 1 teaspoon of olive oil to prevent sticking. Place chicken on grill pan and cook for about 6-8 minutes on each side or until completely cooked to an internal temperature of 165 degrees.
  4. During the last 2 minutes of cooking, add halved cherry tomatoes to the grill pan and cover with lid. Remove chicken and continue cooking cherry tomatoes until slightly charred.
  5. Scrape spaghetti squash using a fork into strands and mix with pesto. Top with sliced chicken breast, cherry tomatoes, feta cheese, and halved kalamata olives.
Recipe Notes
  1. You can substitute full-fat feta cheese for reduced fat or low fat to decrease calories.
  2. Try making your own pesto and freezing it in ice cube trays for quick grab n' go dinners. I like this pesto recipe.
